(I spent two dreadful years adjusting my execution of this without
having any air pockets in the chip, or even browning, or getting it thin enough to be
translucent. Hint: Press super thin slices as hard as you can between two paper towels. Bake
on the absolute flattest sheet tray, under a heavy super-flat rondeau, weighed down with pie weights/canned beans/etc.
